The snack wrap is back at McDonald’s… and while I want to be excited, I also don’t want to suffer for three days just to try one. If you're like me—gluten free and a little tired of being left out—this one's for you.
I decided to take matters into my own kitchen and make a grain-free version that hits the same crispy-crunchy-satisfying note without the aftermath. These homemade chicken tenders are super easy to batch prep and freeze, so you can whip up a snack wrap whenever the craving hits.

Grain-Free Freezer Prep Chicken Tenders
These are great for wraps, salads, or just dipping in your favorite sauce. I make a big batch and freeze them so we always have quick protein ready to go.
Ingredients
~1.5 pounds of chicken tenders
2 eggs
1 cup almond flour
Onion powder
Garlic powder
Sage
Oregano
Mustard powder
Salt
Instructions
Preheat your air fryer to 375°F.
In one shallow bowl, whisk together the eggs and set aside.
In another shallow bowl, add your almond flour and spices (about 1 tsp each, or to taste). Whisk together with a fork.
Dip your chicken tenders in the egg, then coat in the almond flour mixture. Place on your air fryer rack in a single layer.
Air fry at 375°F for 12 minutes, or until the internal temperature reaches 165°F.
To freeze: Let tenders cool to room temp. Place in a single layer on a parchment-lined baking sheet and freeze for at least 4 hours. Then transfer to a freezer-safe storage bag.
To reheat: I prefer to reheat these in an air fryer at 400°F for 5-8 min (depending on how many you’re reheating) but microwave for approximately 1:30 min will work too.
Homemade Honey Mustard Sauce
This is the perfect dipping sauce or spread for your wrap.
Ingredients
~1/3 cup mayo
3–4 tbsp Dijon mustard
3 tbsp honey
Pinch of salt
Instructions
Add all ingredients to a wide-mouthed jar or small bowl and mix until smooth.
How to Assemble a Gluten-Free Snack Wrap
You’ll need:
Tortillas (I used Siete cassava wraps)
Shredded lettuce
Shredded cheddar cheese
Homemade honey mustard sauce
Grain-free chicken tenders
Instructions
Heat your tortilla. I like to use the open flame on my gas stove, but a hot pan or a quick microwave works too.
Spread some honey mustard on the tortilla.
Add shredded lettuce, cheese, and one crispy chicken tender.
Wrap it up like a little burrito and enjoy immediately.
