The 10-Minute Dinner I Make When We Come In Hot
it's so easy that it feels silly writing as a recipe
Sometimes the simplest recipes are the ones that end up on repeat the most. This one is proof — it'll take your oven longer to preheat than it will to throw dinner together, and that is not an exaggeration. This is the meal I lean on when we come in hot from sports practice or school events and everyone is suddenly starving at the same time. Warm, cheesy, one pan, and on the table in about ten minutes if you've done any prep at all on Sunday. It tastes way more impressive than the effort required, which is my favorite thing a dinner can do. Skillet enchiladas are a permanent resident in my back pocket and after you make them once they'll be in yours too.

All you need for this recipe is:
Chicken Breast (About 1.5-2 lbs)
Spices: salt, pepper, onion powder, garlic powder, paprika, cumin
A jar of enchilada sauce
8 tortillas
One 8 oz block of cheese
Optional: add a can of green chiles for extra flavor and heat
The ten-minute dinner only works if Sunday did its job. Here’s what I prep ahead:
Instant Pot Chicken method*
Shred your block of cheese and store it (I don’t buy shredded cheese because of cellulose!)
Cut your tortillas into strips
Instant Pot Chicken Method:
Make sure the steam rack is inserted into bottom of the Instant Pot
Add your chicken
Add at least one cup of water or chicken broth to bottom of Instant Pot
Season your chicken liberally (for this recipe I used: salt, pepper, onion powder, garlic powder, paprika, and cumin)
Cook on high pressure for 7-9 minutes
Shred your chicken with a hand mixer and store in the fridge
Preheat your oven to 400 degrees F.
Heat an oven safe skillet to a low heat. Add your jar of enchilada sauce and tortillas. Allow the tortillas to soften slightly.
Add your shredded chicken to the skillet and stir until mixed well.
Remove from heat and add your shredded cheese on top.
Bake in oven for 10 minutes or until cheese is melted.
Serve and enjoy!
