Marshmallow Cereal Treats (Halloween Edition đđ)
An easy allergy friendly treat!
The very first thing I ever âcookedâ was marshmallow cereal bars at my grandmaâs house. Whenever she babysat me, sheâd let me stand on a stool and stir the pot while the marshmallows melted into buttery goodness. Somehow, hers always tasted better than anyone elseâs, and Iâve come to believe it was her special ratio of butter, marshmallows, and cereal that made them just right.
Now as a mom, I love sharing this tradition with my kids. The store-bought versions donât work for me anymore since theyâre filled with ingredients I canât eat, but luckily Iâve found a way to make them allergy-friendly. Dandies marshmallows* are gluten- and corn-free, and when paired with One Degree Organic Rice Cereal*, they give you the same chewy, nostalgic texture without the extras.
This is one of those recipes thatâs just as fun to make as it is to eat. My preschooler stood on the stool just like I once did, helping stir the gooey marshmallows and pressing the mixture into the pan. Decorating them for Halloween was the best partâbecause letâs be honest, googly monster eyes made from marshmallows and chocolate are always a hit.
Marshmallow Cereal Treats
Ingredients
1 box One Degree Organic Rice Cereal
2 bags Dandies marshmallows (save a few for eyes!)
2 sticks of butter
For decoration:
2 tbsp chocolate
1 tsp coconut oil
Instructions
Grease a 9x12 baking pan and set aside.
On low-medium heat, melt the butter in a large pot.
Add the marshmallows and stir until smooth and combined.
Turn off the heat and stir in the cereal until evenly coated.
Pour into the prepared pan and let it cool.
Once set, cut into rectangles with a sharp knife.
To Decorate
Place the melting morsels in a small bowl with 1 tsp coconut oil and melt. Do the same with the chocolate (you only need a little).
Cut mini marshmallows in half for eyes.
Dip one side of the cereal bar into the morsels. Place marshmallow âeyesâ on top.
Dip a toothpick in melted chocolate and dot the marshmallows for pupils. Let cool before serving.
Every time I make these, Iâm reminded that the best traditions donât have to be complicatedâthey just have to be shared. Something as simple as a marshmallow bar connects me back to my grandma and forward to my kids, making holidays feel a little more special in the process.
