Gluten Free Faux-reo Cheesecakes

Would you believe that I’ve been making a version of these cheesecakes since I was in 8th grade? I’ve had this cheesecake recipe on my Instagram feed before, but wanted to give it a permanent spot here. It’s a Valentine’s Day tradition in my house and has evolved over the years and especially as I became gluten free. One time I couldn’t find a gluten free crust at all in the grocery, so I decided to start making them in muffin tins. My husband really liked them made individually because he could freeze them and pull one out at a time.
Also a note: I haven’t bought white sugar in probably 8 years so none of my recipes include it, hence the brown color of the cheesecakes. Feel free to use it if that’s your preference. I will have a printable version of the recipe at the bottom for paid subscribers.
