Freezer-Friendly Bagel Breakfast Sandwiches

This easy breakfast prep is one of the fastest wins in my rotation. No stovetop, no fancy gadgets, and no early morning cooking. Just some quick oven-baked eggs, a bit of assembly, and you're set with a hearty, satisfying breakfast for the week.
I started breakfast prepping about two and a half years ago when my husband and I were doing Whole30. At the time, I had a 9-month-old and a 3-year-old—both very vocal about needing food the second their eyes opened. I didn’t have the time (or energy) to start from scratch every morning, so I began prepping breakfasts we could just heat up and eat. It was a game-changer.
Since then, I’ve learned that breakfast is the best place to start if you’re new to meal prep. It’s easy to scale up, it solves the chaotic morning scramble, and it gives you a win early in the day.
This recipe uses three main ingredients: bagels, sausage patties, and eggs. You can keep it dairy-free with your favorite plant-based cheese and non-dairy milk, and you can make as many (or as few) as you need.
Minimal cooking. Major payoff. And a much calmer morning.
Freezer-Friendly Bagel Breakfast Sandwiches
Makes 8 sandwiches — scale up or down as needed
Ingredients
8 grain-free bagels (I used Bedrock Baker’s plain)
1 pack AmyLu breakfast sausage patties (8 count)
8 eggs
1/4 cup milk of choice
Salt + pepper, to taste
Optional: cheese of choice (regular or dairy-free)
Instructions
Preheat oven to 350°F.
Whisk eggs, milk, salt, and pepper in a bowl.
Line a quarter sheet pan with parchment paper and lightly spray with avocado oil.
Pour egg mixture into pan and spread evenly.
Bake for 10–12 minutes, until eggs are just set.
Cool slightly, then cut into 8 squares.
Assemble sandwiches: split bagels, add one sausage patty, a square of egg, and cheese (if using).
Wrap each sandwich in parchment paper and place in a freezer-safe bag.
To Reheat
From fridge: Let thaw overnight, then air fry at 400°F for 5–7 minutes.
From freezer: Microwave for ~2 minutes, until hot throughout.
