Fast Weeknight Meals for Busy Nights
When life is busy, I want dinner to be fast, filling, and stress-free — especially on weeknights. I don’t want to spend an hour in the kitchen after homework, sports practices, and everything else on the calendar. These are my go-to fast weeknight meals that come together quickly, use simple ingredients, and keep everyone at the table happy.
Chicken Wings
Chicken wings are one of the easiest weeknight dinners and so versatile — you can flavor them however you like.
Basic Method:
Air Fryer: Cook at 400°F for 18–20 minutes with just salt and pepper.
Oven: Place wings on a wire rack set on a baking sheet and bake at 425°F for about 20 minutes, or until done.
Favorite Flavors:
Lemon pepper
Melted butter + minced garlic + parmesan
Asian sticky wings
A premade sauce (we love Noble Made’s buffalo sauce*)
Smashed Potatoes
The easiest side dish that everyone loves — and perfect for pairing with any of these fast dinners.
How to Make Them:
Preheat oven to 400°F.
Boil pee wee potatoes for 15 minutes, then drain.
Place on a baking sheet and smash with a glass jar.
Drizzle with olive oil, sprinkle with salt and pepper.
Bake for 25 minutes or until crispy.
Sausage Scramble
This is by far our easiest weeknight meal — ready in 20 minutes!
How to Make It:
Chop precooked sausage, onions, baby gold potatoes, and bell peppers.
Cook together over medium heat on the stovetop (or on a Blackstone) with a little oil, salt, and pepper until crispy.
It’s a filling, one-pan meal that we make on repeat during busy weeks.
Burger Bowls
Burger bowls get a bad rap online, but they are one of my favorite quick dinners because you can switch up the flavors every time and they always turn out delicious.
What We Do:
Burger Patty: 1/4 lb ground beef, seasoned with salt and pepper, smashed on the Blackstone (or in a cast iron skillet).
Fries or Wedges:
Slice sweet potatoes into chunky fries.
Toss with oil, salt, pepper (add cumin and paprika for more flavor).
Air fry at 400°F for about 20 minutes (adjust based on thickness).
Toppings:
Shredded lettuce
Diced cherry tomatoes
Burger sauce or ketchup (we like Primal Kitchen’s no-sugar ketchup)
Optional: fried egg on top (my favorite!)
Turkey Skillet
This is one of my most requested recipes because it’s a true fast weeknight dinner. You can chop everything ahead of time so it comes together in just minutes.

Final Thoughts
Weeknight dinners don’t have to be complicated or time-consuming. These recipes are quick, family-approved, and flexible enough to work with what you already have on hand — which is exactly what we need on busy weeknights.
