Easy Spring Salad
eating this salad on repeat and it comes together very quickly!
An easy meal prep salad that won’t get soggy!
I have tried to have lots of easy meal prep lunches for myself and this one fits the bill. I love just making the chicken and dressing at the beginning of the week and having the other ingredients on hand to throw this quick salad together!
Make the chicken
First you’ll want to cook some chicken in the Instant Pot. I have a video on making that here.
Place the rack at the bottom of your Instant Pot and place three chicken breasts on top.
Pour some chicken broth in the bottom of the pot but don’t let it touch the chicken
Season your chicken with spices of your choice. I like salt, pepper, onion and garlic
Cook on high for 9 minutes. It can very a minute or two based on how much chicken you put in the Instant Pot
Put your chicken in a container and shred with two forks or a hand mixer
Prep the dressing
Next you’ll make your salad dressing. There are a couple of ways to make it. If you have an immersion blender, make your mayonnaise first in a wide mouthed jar and then add your dijon mustard, and honey. I also love to use Mike’s hot honey for an extra kick. If not, you can use regular mayo and combine the other ingredients with a spatula.
1/4 cup olive or avocado oil
1 egg
4 tbl dijion mustard
4 tbl honey
Add your oil and egg to a jar and use your immersion blender under mayonnaise is formed. Add your other ingredients and blend again.
If you prefer a thinner dressing, add some apple cider vinegar to your liking. This dressing is very flexible to adjust to your taste preferences. I rarely measure when making it!
Prep the elements
I keep all the ingredients separate and make a salad each day as I go. I store the chicken in a container, a dressing in a jar and have the other topping ready to go.
For the salad:
Shredded carrots
Unsweetened crasins
Goat Cheese
Spring mix lettuce
