Copycat Cola Cake
a childhood southern favorite of mine
There was a stretch of my childhood where I ordered dessert at Cracker Barrel for one reason only. Coca Cola cake. It was never guaranteed to be on the menu, which somehow made it even better when it was.
My grandmother made her own version too, and that’s the one that stuck with me. Rich, nostalgic, and a little over the top in the best way. I wanted to recreate that same feeling, just with ingredients that fit how I cook now. This version is not “healthy,” but it is gluten, grain, and corn free.
To keep things simple, I used a boxed mix from Simple Mills as the base. For the cola, I swapped in Olipop Vintage Cola to keep it corn free without losing that classic flavor. And for the marshmallows, Dandies are the only ones I’ve found that work here without adding corn ingredients.
It’s a shortcut version of a nostalgic dessert that still delivers on flavor, texture, and that familiar Coca Cola cake moment.
