Tomorrow is the The Summer I Turned Pretty series finale, and I’m over here crossing my fingers that Belly finally chooses Conrad. (Team Conrad. Sorry, Jeremiah!)
One of my favorite things about the show is how food keeps showing up as this little love language — popsicles, muffins, sour patch kids. Food has a way of bringing people together, which is why I hate feeling left out when there’s something I can’t eat. These dirt bombs are my gluten-free love letter to all of us who want to join the fun without the stomachache.
They’re soft, buttery, and rolled in warm cinnamon sugar. It took a few tries but these will be perfect for watching the finale and they are even freezer friendly/

The key to light, fluffy muffins is properly creaming the butter and sugar — don’t skip this step!
You can freeze the muffins before coating them in butter and sugar. Just thaw, warm slightly, then coat when ready to serve.
Maple sugar worked best and had the best flavor profile. I get mine on amazon here*.
