I’m turning 40 soon, so it felt right to share a single-serve birthday cake moment.
I’m usually all about doubling recipes and prepping ahead, but sometimes you just need something for you. A craving hits and you want it now, without making a whole batch or ending up with something that spikes and crashes you.
A lot of mug cakes are loaded in calories or way off balance on macros, so I kept this one lighter by using applesauce for moisture instead of extra fat or dairy. It’s soft, sweet, and comes together in just a few minutes.
