Back to School with Tennessee Morning Muffins

We have a few back to school traditions around here to celebrate the first day of school. I always take our first day of school pictures a few days ahead of time so we can have a dress rehearsal and not be rushed on the actual first day of school. When I take their pictures, I also like to do a little video interview with questions like “What do you want to be when you grow up?” or “What is your favorite book right now?”You know books will somehow be involved in our traditions, so we love reading from this list of books the night before:

Another fun tradition is I make a simple boxed cake in the shape of an apple the night before. It’s not a lot of work and I use India tree brand food coloring or dried strawberries to color the icing. It’s nothing fancy, but a fun memory to have.
The last tradition we have is on the morning of we have a big pile of muffins on a cake plate. I keep these morning muffins mainly for the first day of school or in the fall so they seem special. My kids were even asking about them over the summer. The great thing about muffins is you can bake them ahead of time and freeze them. (Same with the cake uniced!) You don’t need to rush around last minute. Just find a pocket of time to bake them and pop them in the freezer until the morning of. Let some thaw out over night and reheat in the microwave or smart oven.
