Apple Cinnamon Blender Muffins
My kids favorites and only take 5 minutes to make
These are my daughter’s favorite muffins that I make and requests them often! They only use a few simple ingredients and take about 5 minutes to make in the blender. You could make them dairy free by swapping the butter for a dairy free butter or coconut oil.
Apple Cinnamon Muffins
2 cups applesauce
2 eggs
1/4 cup maple syrup
1 tsp vanilla
2 cups gluten free oats
2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
Crumble:
3 tbl butter (or swap coconut oil)
1/4 cup coconut sugar
1 tbl cinnamon
Instructions:
🍎 Preheat oven to 350.
🍎 In a blender add applesauce, eggs, maple syrup and vanilla. Blend for about 30 sec until smooth
🍎 Add gluten free oats, baking powder, and salt and blend again. It doesn’t have to be perfectly smooth and it’s ok so see a few oats here and there.
🍎 Make the crumble by melting butter and adding the cinnamon and coconut sugar to it until fully mixed.
🍎 Spoon approximately 1/4 tsp on the top of each muffin and swirl in with a toothpick.
🍎 Bake at 350 F for 25 min and let cool on a wire rack.
